Bar Manager Kyle Ritchie will provide a demonstration on the process and inspiration that went into designing each drink as well as the method of building them.

In his short time at Doug Fir, Kyle has modernized the bar program and implemented new techniques. Alongside Doug Fir’s Assistant Bar Manager, Pete Maben, he’s created a culinary-driven bar program featuring local and seasonal products. They’re fully embracing the broad range of flavors that make the Pacific Northwest unique while employing scientific methods to find the perfect balance in crafting drinks. A favorite technique, clarifying juices, can be seen in the Doug Fir Daiquiri and Clarified Mimosa. It lends a pure aspect to the taste and texture of the juice and gives the cocktail an elevated aesthetic. The bar team is also using force carbonation techniques in drinks like the signature Nitro Old Fashioned, as well as creating other unique foams, rapid infusions, and tinctures.
