Kyle Ritchie is originally from Albuquerque NM, where he took his first kitchen job at the age of 16. Shortly after, he moved to Denver, CO and got another job cooking. He jumped around from kitchen to kitchen, as many young cooks do, but being around great bar programs and talented folks, he often found myself volunteering any extra time to help with bar prep and garnishes, and of course asking questions about everything. He came to Portland in 2010, and at this point he knew that he wanted to continue learning as much as I could about hospitality and cocktail making. Working in places like Park Kitchen, and later running the kitchen at the Rum Club, only furthered his desire to bartend. From the creativity involved in blending ingredients into one glass, to the importance of the right ice, he found it all fascinating. After a spending a year back in Albuquerque as the executive chef of a local restaurant - Marcelos - he finally made the transition to bartending. More recently, he was brought on to a new project, The Buckman Public House, where he eventually became the bar manager. It wasn't until his time there that he realized how much more he could do with all of those ingredients, and that one glass. Working with some amazingly talented bartenders, and pushing the boundaries using his past experience in the culinary world, he finally found a niche of combining the culinary and molecular aspects of cocktail making.

In his short time at Doug Fir, Kyle has modernized the bar program and implemented new techniques. Alongside Doug Fir’s Assistant Bar Manager, Pete Maben, he’s created a culinary-driven bar program featuring local and seasonal products. They’re fully embracing the broad range of flavors that make the Pacific Northwest unique while employing scientific methods to find the perfect balance in crafting drinks. A favorite technique, clarifying juices, can be seen in the Doug Fir Daiquiri and Clarified Mimosa. It lends a pure aspect to the taste and texture of the juice and gives the cocktail an elevated aesthetic. The bar team is also using force carbonation techniques in drinks like the signature Nitro Old Fashioned, as well as creating other unique foams, rapid infusions, and tinctures.
